Two Vegan Recipes to put on your Thanksgiving Table this Weekend!

It’s been a minute since I’ve said hello over here, so I wanted to pop in and share two recipes with you for any last minute Thanksgiving plans!

If you’re looking for something easy peasy to impress your guests, and treat your tastebuds, then you’ve come to the right page. A Creamy Butternut Squash Soup and a Fall Harvest Quinoa Salad. These recipes are both vegan and gluten-free, and can easily be made grain-free if you choose to omit the quinoa in the Fall Harvest Quinoa Salad.

I’ll also tag these two recipes additional recipes I found in the depths of Pinterest that pair nicely for Thanksgiving: A Raw Vegan Pumpkin Cheesecake recipe from The Roasted Root as well as a Homemade Vegan Butter recipe from A Virtual Vegan (perfect to spread on some freshly baked sourdough to dip in the soup!).

My friend Aelea and I had the absolute privilege to host twenty five women over the weekend for Harvest: Holy Yoga + Dinner @ Dusk. An evening of movement, community, connection, and foooood. I’ll be sharing alll the details in a blog post coming up in the next week or two, as it was truly one of the most beautiful evenings I have had the opportunity to be part of. There are so many God-moving stories of faith, hope, inspiration, and vulnerability to share. It’s been hard for me to even begin to put my thoughts and feelings down to paper, which likely means a few good bath tub journal and tears evenings are yet to be had. I am still on cloud 9, and so immensely grateful to have shared an evening with these incredibly strong and generous of spirit women.

But for now! Back to the food!

As Thanksgiving is only days away (!!), I wanted to take a quick moment to share a few recipes you may want to grab the ingredients and cook up. We served these at Harvest, and they were a hit!

Here they are!

I love how this soup is not only a bowl of comfort, but also packed with immune boosting vitamins and antioxidants to fight off any colds that may be brewing. Butternut squash also contains plenty of fiber and will help keep your digestion on point!

I love the warmth and sweetness of this salad, served with my favourite salad dressing recipe found here. I chose to use maple syrup in place of honey, and added 1 tbsp of tahini to make it extra creamy! Secret ingredient is the Smak Dab Djon Curry Mustard!

Whether you’re having a Thanksgiving with your entire extended family, a Friendsgiving with closer friends that might as well be family, or you find yourself solo this year (soup + salad stays good in the fridge for 4-5 days!), I hope you enjoy a little extra coziness this weekend.
